Laminated choc brioche with savory walnut praline and sticky date toffee, encrusted with cocoa nibs and caramelized walnuts, finished with a Pedro Ximénez glaze.


Cloudberry Lemon Verbena Tart*

Brick pastry tart loaded with a cloudberry jam, amazake and cubes of lemon verbena marshmallow. Covered with a veil made from verjus decorated with locally sourced herbs and flowers. 


Laminated Cheese Donut*^

Laminated fried donut pastry filled with a 4-cheese custard and mead, finished with a disc of fig compote and Tasmanian leatherwood honey.

Our chef’s signature bake! Flaky pastry layered with butter and caramelised sugar, with hints of vanilla and molasses.
