Flaky galette pastry crusted with Demerara Sugar, and baked with a juicy Pineapple Jam reminiscent of Pineapple Tarts, gets layered with Pineapples fermented over 48 hours with aromatics, sliced, grilled and glazed with the Pineapple juice reserved from the fermentation. It is then finished with locally sourced Marigold Cress and Creme Fraiche.
